im not great with computers would someone be able to help with some suggestions please.
we have £1800~ to work with, will be used for gaming both online and single player games.

Unless you plan on Virtualization ,video rendering, other CPU intensive purposes etc, I would recommend going with a Z170 Motherboard build. An I7-6700K will actually perform better in the majority of games than a 6/8/10 core by Intel, I would recommend you save the money. You could drop to an I5-6600K for further savings, albeit at the cost of lower clock speed. You may also want to overclock the build. You get a higher clockspeed and your selected cooling (Corsair H100) will handle this perfectly. If you don't overclock, you could save here and buy the £70 ish Noctua Cooler. I'm not great in regards to case selection, but you have currently selected a £120 case. Whilst this is not a bad thing, and aesthetics do matter to some people, if you wanted to save further money without compromising on airflow etc I believe you could go with something cheaper if necessary.

I selected the Savage SSD over the Kingston UV400 as it performs slightly better and is slightly better value for money.

Apart from that I have kept basically everything else the same, which has opened up £300 in your budget.
Possible options from here :
Upgrade GTX 1060 -> GTX 1070 (+£163)
480GB SSD (Double Capacity of current) (+£54)
Add an M.2 NVMe SSD (Varies in price, but a regular SSD should be fine in terms of gaming with the rest of the spec)
Add more hard drive storage : You can never really have "too much" storage, you mentioned you will be adding in a 1TB Hard drive, so this may not be a problem. Just another option you can do.
Blu-Ray drive : If you plan on watching Blu Rays on your PC, you can upgrade your DVD Drive, if not then don't bother :)
Just a quick side note on the Z170 Motherboard you get 5.1 Surround Sound, so if you want 7.1 surround sound you *may need* a 7.1 Sound Card. (Confirmation needed)

100% agree on the 6700k suggestion over the 6800k for gaming. The 6700k's higher IPC and frequencies count for more for games.

The Gigabyte mobo apparently supports the 3000MHz DDR4 and 7.1 audio (it has the ALC 1150 chip, better than the 887 found on the Z170-P and E iirc): http://www.gigabyte.com/products/product-page.aspx?pid=5497#sp
If you're paying £20 more for the HyperX over the UV400, you might as well pay £20 more than that and go for the ludicrously fast NVMe
The Noctua is more than fine for an OCed Skylake so you can shave £50 off the H100i V2.

I confess to twitching when sites like userbenchmark are linked. It's arguably not quite as bad as GPUboss (which I once saw have the R9 380 outrank the R9 380x for gaming scores, :/) but I'm not sure for CPU benches whether it even gives a way of filtering out OCed CPUs from results for example. There are some actual review websites that show benches including both the UV400 and the HyperX Fury however:
