Thoughts/advice on this build? (I'm not tech savy!)

I'm going to have to get a new PC this year because a) my current one isn't compatible with windows 11 & b) I'm struggling to get it to cope with video editing and recording Minecraft gameplay at a decent resolution. I could add my existing 1Tb SSD to this build to provide more storage (along with external hard drives for archiving video files.) This is really pushing the limits of my budget so I know it's probably not ideal but hope it might be a bit upgradable in future. Any insights or advice welcome... but be gentle, I'm not hugely tech savy! Thanks in advance

Intel is a no no, and what is your budget, if this is pushing your budget then your budget isn't realistic, so I'd suggest you save some more, as you're probably looking at just under double of the cost of the above build

If you haven't kept up with the news, their processors for the last 3 generations melt at the core, plus they perform far worse even when they do work, plus they're generally unstable at the best of times while using double the power to achieve that poor performance.

They're now what AMD were in the bulldozer days, you run a mile from them.

But it's been all over the news for over a year as banks, datacenters, etc etc all had to switch over to AMD to keep their systems online.
