Alright, so with £3k for a PC and monitor I've gone for this. Moved you to the AMD platform as we can get a great bang for the buck CPU in the 5600x that will smash out 4k gaming without issue and has a lower thermal output than the Intel CPU you had originally specced, so we don't need to spend as much on cooling. This gives us room for the 3080 which is the go-to card for 4k 144hz gaming.
Improved your storage, got a bigger PSU to support a potential GPU upgrade in a few years.
Pair this up with the Gigabyte M32U, a 32 inch 4k 144hz monitor that gives great performance that won't burn a hole in your wallet.

Can I ask the importance of the extra SSD’s? And also the usage of a much more powerful power source than required?
Also with the SSD where would you recommend the OS being installed?

The higher power PSU is for a bit of future-proofing and extra headroom - as the Intel CPUs and Nvidia GPUs can use a lot of wattage when running full blast (as much as 200w each I believe) so add in a few watts for SSD/HDDs, USB-connected devices, RGB, etc. and you could be close to the working/recommended capacity of the 750w PSU (usually try to stay within about 70% of it's max to help efficiency/heat/noise). Plus it allows you to put a beefier CPU/GPU in at a later date without having to fo the hard work of swapping out the PSU.

The SSDs (in m.2 form) are many times faster than the SATA one you chose originally (the 'fast' one is about 14x faster, and the 'slow' one is 7x faster than the SATA SSD)
  • The smaller fast one is for your boot drive and applications...as they're what will take most advantage of the really fast m.2 SSD.
  • The 2nd, larger one is slightly slower - for your games installations - as it doesn't need to be ultra-quick for running games launchers, launching games and loading in game assets.
  • The reason for having 2 m.2 drives is so that the normal operation of the OS (which is running background processes all the time) doesn't impede on general performance by trying to read/write both system and gaming data a single SSD at the same time...2 SSDs means it can run 1 process on one SSD and another on the 2nd SSD in parallel (using each SSDs cache to speed things up) instead of trying to run 2 processes in sequence on a single SSD and thus having to wait for the first to complete.

So you have 2 SSDs because they have different purposes. The 500GB drive is for the OS and programs which you always want on the fastest drive you can fit in your budget. Then we have a slower, but still very fast drive for your games. This is about the limit where you'll see an increase in load times in games so having everything on the superfast Gen 4 drives means you're paying extra for no performance boost. It also means if your OS gets corrupted you don't have to reinstall your games library.

@TonyCarter has covered the PSU explanation very well. I have a 1000W PSU in my own rig and I only have a 3070, so I do also practice what I preach! :)
