I was going to go for 16GB but decided I'd limit to 8GB. It's using a single 1x8GB so I'll have the spare slots.
Note: is there any way I can make 100% sure they really stick to that order promise and don't use up slots with 2 x 4GB or even worse 4 x 2GB, limiting my future expansion possibilities.

Uh..... I wouldn't get 2tb of SSD space. Get a 240gb/480gb SSD and then a 2tb HDD.
They will definitely put 1x8gb in, they don't stock the others or they'd sell them. 4910 is a bit of a rip off, 4810 would be fine.

I'm done with HDD's now, no space in my machine's for 'em. If there's a slot for a HDD, an SSD's going in it :D I've had the SSD+HDD config for the last 3 years and the HDD involvement was always the disappointing part. From now on HDD's are only to be used as external drives for backups and nothing else.

4910 is a bit of a rip off, 4810 would be fine.
I've looked at the prices and performance and feel fairly happy with the 4910 choice. I'd have gone higher if there was a more powerful one. The 4810 is a bit of a dip in performance from my desktop's i7-2600K. I only want to be increasing, not decreasing. I feel the 4910 is enough of a gap to the 4810 to justify that cost. I have heard that said before though, that the 4810 "would be fine". Whenever I've been stingy with processor choice, I've always looked back and wished I hadn't as I was wishing the machine were faster. I never ever looked back while enjoying my faster machine wishing I'd saved £100 on it here or there.

I suspect, if the OP is using Passmark as his definitive guide, he might feel that the 4910mq is worth an extra hundred to get an increase of 15% Passmark performance but the 4940mx isn't worth a further three-hundred for a 0.2% increase.

There is a more powerful CPU available - the 4940mx.

That's exactly the reason why I dismissed the 4940MX. In that screenshot of Passmark scores, I'd written a quick browser plugin to remove all the Extremes, Xeon's, Desktop processors (except my reference 2600K), leaving (mostly) only the MQ's. Btw, I'm not crazy enough to write a plugin from scratch just to remove some unwanted Passmark scores, I already wrote it years ago, I just re-tasked it to remove these things (took 5 mins).

I was just checking the Omega to see if there was something that might interest you and if you were happy to survive on just 1TB of SSD space, you could fit a desktop 4820k into your laptop and have Crossfire video cards for just €30 more ... ;)

That's what I came here to write ;)

Plus, I don't want two graphics cards. Whatever SLi can do for me, I don't do it (e.g. Gaming, CAD). I want to keep heat-generating sources down to a minimum - not too stressed a processor, no HDD's, a not too crazy graphics card. The 870 I've got in this build is already above what I really need but it's acceptable.

You said you'd have gone higher if there was a more powerful one, just wanted to be sure you'd seen that there is one. Of course, the extreme editions are crazy money for little benefit - I read somewhere they're manufactured in the same process as their little brothers, it's just that a small percentage can stand higher clock speeds under testing, so they set them at higher speeds, badge them up as extreme editions and charge through the nose for them.
