If you have the budget, a decent NVMe SSD like a PM961 / SM961 / 960 Evo would be good in that build.

Why 64 GB RAM? What's it going to be used for?

Same as above and if you get a SSD I would ditch the hybrids and go for normal SATA 7200rpm HDD, the hybrids only have a small SSD part and there is no control over what is on them and after it is just a standard HDD. Your SSD will do all the hard work with the OS and main software and dropping the hybrids will save more than 50 quid which could go towards the m2.
