Generally, the only games using more than 16GB are sims like MSFS 2020, in those cases it is a benefit but not a requirement.
If you dont mind the extra expense and its not killing the budget elsewhere there is no harm.
Not heard of Dual Universe though
Not surprised it is a space engineers type game in beta.

The 6800XT is in a different ballpark to the 3070. The 6800XT is a very powerful card, which is why it's best paired with top-end monitors to make the most of it. The 3070 is the next rung down, as you would expect from being ~£240 cheaper on the configurator. It is more suited to top-end 1440p, 1440p Ultrawide, or 4k60hz.

You might have heard about the 'Smart Access Memory' feature that has arisen with the new AMD products, where you get a performance boost when you pair a 5000 series CPU with a 6000 series GPU. However, this is only a small performance gain in some titles, and can even hurt performance in certain games too.
Nvidia GPUs pair very well with the Ryzen CPUs as well, so I wouldn't worry about not having AMD with AMD. Many of the forum users rock a Ryzen CPU with an Nvidia GPU with great results.

Ultimately though, the 6800XT is a more powerful pick compared to the 3070, and if you want to go that route I would strongly advise stretching the budget to fit a top-end monitor.

Monitor: yeah i know it isn't the best but will update later on down the line, will just end up using this as a secondary monitor at that point.

Gcard: Not really bought into the whole ray tracing thing and as far as i can tell this card does well if that's not your thing, comments appreciated.

RAM: I play a few beta release games that eat memory and I do like the look os microsfot flight sim 2020 so thought i might give that a go.

For a similar build I'd be looking for something like this. I'd definitely get my monitor somewhere else, there are better monitors at better prices elsewhere

I'd also not be going for a 6900XT, the 3080 would be more than enough and honestly Nvidia do make better cards with better drivers regardless of how much AMD are pushing and catching up they aren't there yet

Changed the CPU cooler, the best CPU cooler available is only £8 more

Changed RAM setup to two 16GB sticks, it costs about the same but gives you the option to stupidly go to 64GB if you wanted? Hey options right

Kept the Plat warranty cause I figure you want that?

my only concern with the rtx 3080 swap is simply the wait time....eye watering eta of 01/09/2021 and is what got me to consider the AMD alternative

Not really sure why I added a plat warranty, bad idea?

Well look most parts if they are going to fail will fail within the first year. The silver warranty covers this so that's the one I always recommend

3070 is also a choice, granted not as powerful as the 3080 but it will offer the top end of 1440p gaming for now

6800XT is an absolute monster and is only i think... £100 more than the 3070 at the moment, despite beating the 3080 in a lot of benchmarks. But as already said, it would be wasted unless you got the monitor to pair it with

RAM - My understanding is 2* 16 is better for ryzen based systems than 4 by 8 but for some reason I expected the opposite to be true, is this normal? Am I making a mistake in choosing 2 by 16 instead of 4 by 8?

It was with the 3000 series cpus, the 5000 series cpus are better on 4 stick.
Its useful to think now though if you would want to upgrade, so the option of 2 x 16 may be better than 4 x 8 should you want/think you would need more RAM in the future.
