My only feedback is about your ram choice, but since you didn't post the link to configure, I couldn't check what was available. I would recommend getting a higher frequency than 5600, if possible. 6000 would be the minimum, but if there's higher available, even better. Not a lot to comment...

Depends on your budget and how far you're willing to stretch it. My suggestion would be a 360 AIO, so any corsair H150I would be great. If that's too much, maybe a 280mm would also be ok? Which would then mean any of the H115I options from corsair. But if want to cheap out on the cooler a bit...
